Crockpot Pumpkin Pudding Casserole

With the heat of summer upon us, I am really looking forward to Autumn to be here. It's my favorite season of them all and I wait patiently for the leaves to begin to change and jeans to come back out of my closet. Not to say I don't enjoy the moment that I'm in - I'm LOVING the pool time with my kiddos... however I am getting tired of the mile long walk with my dog in the blazing heat!

Alllll of this to say, I wanted pumpkin pudding so badly the other day, but didn't want to heat up my house. I took a recipe I had on hand and threw it in the crockpot to see what would happen.

Crockpot Pumpkin Pudding Casserole
1 yellow Cake Mix
2 sticks of butter (melted)
1 large can of pumpkin
1 can of condensed milk
3 eggs
1/2 tsp. salt
1 c sugar

- Spray crockpot bowl with non-stick cooking spray
- Mix together pumpkin, condensed milk, eggs, salt, and sugar. After combined, pour into crockpot bowl
- Sprinkle cake mix on top
- Pour melted butter over
I cooked mine for 4 hours and let it cool. I then refrigerated it over night and have been eating it for breakfast and desserts through the week. I did eat it straight from pot, but it was better the next day after it set.
